Amazake has been drunk since ancient times, and is highly nutritious, and is expected to be effective for beauty. Amazake, a popular summer nutritional drink in the Edo period, has been attracting attention in recent years.
◆Types of Amazake
Amazake can be divided into two main types. They differ in their alcohol content and production methods, so if you see one, try to compare them to find the one you like best.
・Sake lees amazake
This is an amazake made from the sake lees left over after the sake has been pressed. Like sake, the taste of sake lees differs from brewery to brewery, so even the same amazake has a different taste depending on the sake lees used. Sake lees contain alcohol, so sake lees amazake also contains a small amount of alcohol.
・Rice malt amazake
Like sake, this is an amazake made from rice and rice malt. The rice malt amazake on the market has sugar and flavoring added to it, but the rice malt has been saccharified from the rice, so it tastes sweet as it is. It does not contain alcohol. This is often the type of amazake that is served when you visit a shrine on new years.
Amazake is made from rice and contains a variety of nutrients. Here are some of
the most important ingredients in amazake.
Yeast plant contains more than 100 enzymes that convert the starch in rice into easily digestible sugars such as glucose and oligosaccharides. Glucose is also used in IV and is an important source of energy.
Enzymes produce amino acids from proteins. They are important for muscle maintenance and other purposes, and amazake is said to contain nine essential amino acids that the human body cannot produce.
・Vitamin B group
Vitamin B group works as a supplement for various enzymes and plays an important role as a metabolic vitamin that produces energy. They also synthesize proteins, which are the basis of muscles, skin, and hair, so it is important to take them as much as possible.
Amazake, which is made from grain, is also rich in fiber. It is also expected to relieve constipation due to the intestinal regulating effects of fiber.
◆Easy way to make Sake lees Amazake
In Japan, commercial amazake can be found in supermarkets, but it’s also very easy to make at home.
