A happy thing happened, an inadvertent decanting had rescued it. When we opened it again at Maos, its aroma instantly flowed into the nose of everyone present.
It was great to serve daiginjo with a wine glass. The increased level of contact with the air made the sake revitalized. The wall of the glass provides a space for the nasal cavity to appreciate its floral and fruity aroma. There had never been such an aromatic sake like it. Seemed like had entered the enchantment of a witch, but five senses were dominated by the sense of smell.

Suddenly there was a rainstorm with no reason. And there were thatched houses under the trees not fat away. Hiding in with luck, sitting on the damp wooden boards, watching the lake in the distance which was restless by rain. At this moment, you could smell the thatched house. It was wood and flower, dankness and mixed with fantasies about the heat of the summer.
Next, was its well-known floral aroma. It was not delicate like perfume nor artificial like a product of an impressionist. But could feel the real flowers. As for the meal, I didn’t expect to match Maos so well. There are many Japanese elements in the menu of the day, such as chawanmushi, broth made of shiitake kombu and scallop eggs, etc. The dry base note just connected the umami, and it could be regarded as a good story.
Generally speaking, must read the date of unfiltered unpasteurized undiluted sake before purchase. If already bottled for one year above or nearly a year, and the storage conditions are not credible, you need to be cautious when buying. Although 花薰光 is a bottle of belated namazake. It is fortunate that the quality of genshu is high and the aroma still reserved.
I hope I can drink it in its heyday one day.
